So – it’s about time to start taking olive oils more seriously as they just might help you prevent the cancer that you fear so much. Note that when you want to buy olive oil, you should get the less processed ones because they contain more nutrients if less processed – even though more expensive.

What makes the best hummus – extra virgin olive oil, light olive oil, pure olive oil, etc.? Would I sacrifice anything if I chose a cheaper type of olive oil?
The olive oil added to the chick peas when making hummus, is not cooked further. And the flavor of the chick peas is fairly mild, so this is a place where you consider using your really fresh, expensive, unfiltered, Extra Virgin Olive Oil that makes you go Yum,Yum! when tasting it on the tip of your finger. The better the olive oil, the better the hummus. On the other hand, if it is everyday hummus, use everyday EVOO.

In Italian restaurants it is common to serve bread with oil poured onto a plate with spices added. Bread is dipped into the oil instead of using butter. Which type of oil is used? Light olive oil? Extra virgin? Some other?
When I was in Argentina last year I visited an olive farm where they pressed their own oil. They sold “unfiltered” olive oil, which (somewhat obviously) doesn’t go through the process of filtering out of sediment. It had a much richer flavor than other olive oil that i’ve had. If you can find it I would highly recommend it.

Um, olive oil is made from olives. Canola from canola seeds, peanut oil from peanuts, corn oil from corn. Generally speaking, olive oil has the healthiest fats, ones your body needs so it is considered good for you.
The virgin and extra virgin in referring to olive oil has to do with the pressing of the olives. Extra virgin comes from the first pressing of the olives.
