What are Some Olive Oil Recipes?

March 7, 2011

Olive oil has long been proven to be a lot more beneficial than the ordinary vegetable or canola oils.  Whether people who use it because of the health benefits it gives or simply just their preference, the great things olive oil has to offer outweigh its expensive price.  Olive oil can be a great substitute for the commonly used vegetable oil and you’ll be able to find a lot of great olive oil recipes as well.  Read along and you’ll learn two easy olive oil recipes.

Roasted Garlic Mashed Potatoes

One of the easiest olive oil recipes is the roasted garlic mashed potatoes.  First thing you have to do is to cut off three heads of garlic and sprinkle olive oil to them.  Then you have to place it in a covered pan and heat it at around 350 degrees for around 15 minutes.  During this time, you can go ahead and boil some potatoes on salted water.  You’ll need to wait around 30-40 minutes for this one.  Once the 15 minutes have passed, you can go ahead and add a bit more olive oil to the garlic and go ahead and cover it up for another 10 minutes or so.  You’ll notice the garlic is done once they feel a bit soft.  Once the garlic is done, you’ll need to put them on a bowl or a container.  By this time the potatoes should be almost done.  Once you notice that the potatoes are soft enough for your preference or fork-tender, you can go ahead and drain the pot and mash the potatoes.  You’ll then add the garlic to the mashed potatoes and add a bit of salt depending on your taste.  Add a bit of extra virgin olive oil and mash the potatoes some more up to your desired consistency and there you have it.

Garlic Spaghetti

This is a really easy and quick recipe if ever you’re into pasta.  All you’ll need is 500 grams of spaghetti noodles, 8-9 tablespoons of olive oil, 5 cloves of chopped medium sized garlic, 2 tablespoons of chopped parsley, salt and black pepper.

While you’re boiling the spaghetti noodles to an al dente texture, you can go ahead and prepare the rest.  Pour the olive oil into a pan and mix the garlic, salt and pepper to it.  Cook the garlic at low heat since this will let the flavor seep into the oil.  Right about time when the garlic is golden brown the spaghetti will be done.  Transfer the noodles to a serving dish and pour in the oil with the garlic.  You’ll then toss the spaghetti noodles and once done, sprinkle the two tablespoons of parsley on top and there you have it – nice, quick and easy.  This recipe may sound like one of the dull olive oil recipes you’ve heard of, but the end product is pretty good.

There are many ways of using olive oil to make your everyday meals into special ones.  There are tons of other olive oil recipes out there and bit by bit, you’ll love the enhanced flavors your dishes will have.  You might even make your own olive oil recipes as well.

A Simple Lemon Olive Oil Recipe

February 14, 2011

A lot of people nowadays start to use olive oil when cooking their food.  There are many reasons why people now prefer to use olive oil than the usual vegetable one.  Whether they’re doing it for the health benefits or personal preference, you can’t really deny the fact that olive oil tastes so much better than the commonly used oils.  Another reason would be the fact that you could add a bit of flavor into the oil and turn it into something new and interesting and one in particular is lemon olive oil.

How to Make Lemon Olive Oil

If you’re looking for really simple way to give the distinct taste of olive oil a tangy makeover, you can easily turn it into lemon olive oil.  First, you’ll need to pick a good lemon and scrub it in order to make sure it’s clean.  Then you’ll need to let it dry and once dry, you’ll need to cut away the small silvers of the rind.  Also, make sure not to include the white part of the lemon skin since it will make your lemon olive oil recipe taste bitter.  Next, you’ll want to heat the olive oil.  You might want to use either virgin or extra virgin olive oil for this and you’ll need around 1 cup of it.  Do not over heat the oil since it has a low smoke point; just get it warm over a few minutes.  Once the oil is warm, you can then put the peels on the oil.  You’ll want to leave it on a low to medium heat for about 10 minutes or so.  Wait for it to cool off for a bit and once it has cooled down, put it in a bottle seal it with either a cork or a rubber lid.  And now you can store your lemon olive oil in your refrigerator.

Simple Meals to Special Ones

With the lemon olive oil you just made, you can turn simple dishes to special ones.  You can use it on a cake if ever you’re aiming for a tangy flavor from it.  You can use it for a lemony chicken if you prefer.  Or you could even use it for a special oven roasted asparagus.  You can easily turn you favorite meals to a lemony cuisine if you sprinkle the lemon olive oil on them.  You can add lemon olive oil to just about anything and you’ll surely have fun trying new things out.  Also, with the unique flavor of olive oil added with a touch of lemon, you’ll surely love how things turn out in your kitchen.

Olive oil does have a certain taste to it that’s really easily recognizable since it has a strong flavor to it.   If ever you want something more out of olive oil, you could do so by adding flavor to it. Once you’ve made your own lemon olive oil, you’ll realize that it’s the perfect way to add a lemony flavor to your cooking.

Does anyone have a traditional Olive Oil Ice Cream recipe?

July 5, 2010

I’ve heard tales of this ice cream and never tried it. If anyone knows a very good, very old-style recipe for it, please post it!

Olive Oil Ice Cream with Figs Poached in Wine and Spices

12 figs

For the ice cream

500 ml (2 cups) milk
250 g (1 cup) crème fraîche
150 g (3/4 cup) sugar
5 egg yolks
100 ml (6 tbsp.) Catalan olive oil, mild and round with a light almond flavour
1 vanilla bean

For the red wine syrup

500 ml (2 cups) red wine
50 g (1/4 cup) sugar
1/2 vanilla bean
Zest of 1/2 orange
1/4 cinnamon stick
A touch of powdered saffron

Making the ice cream

Heat the milk with the cream and the split vanilla bean. Beat the egg yolks with the sugar until they are light and foamy. Slowly add the hot milk to the egg mixture, mixing constantly; place over low heat and continue to stir until the mixture thickens enough to coat a spoon.
Add in the olive oil and place into an ice cream maker to freeze.
Cooking the Figs and Presentation

Make a syrup with the sugar, red wine, orange zest, half a split vanilla bean, the cinnamon and saffron.
Bring to the boil, add the figs and let cook over low heat for 15 minutes; cool.
Remove the figs and return the cooking liquid to fairly high heat to reduce it to a thick syrup.
Return the figs to the syrup and warm them through.
Arrange the figs in deep plates; pour the syrup over top. Place one or two scoops of the olive oil ice cream alongside the figs.
